Halloumi Vegetable Bake

Aubergine
Courgettes
Tomato Passata
Halloumi Cheese
2 Cloves of Garlic
Olive Oil
Oregano


Pre-heated oven at 180°C

Serving For Two




  1. Cut 2 cloves of garlic into thin slices and put them in a pot with olive oil. When the garlic begins to fry, add a whole bottle of passata. 
  2. When you empty the bottle, there will still be tomato on the sides, so to thin the sauce a little and wash out the bottle, fill up the passata glass jar 1/4 full and shake it. Pour the mixture of the water and tomato sauce in the pot. Turn the heat down to medium, season with salt and let the sauce slowly boil. 
  3. Cut 1 whole aubergine and 3 courgettes into thin slices. Use a long knife, the length of the vegetable,  and carefully cut the slices all the same thickness. They need to be a around 2 cm thick so that when the go on the grill they don't become too thin.
  4. Place them on a hot grill or griddle pan, seasoned with salt and drizzled with olive oil. Let both sides of each slice grill for a couple minutes, until you can see dark lines of the grill in the vegetable. 
  5. When your vegetables are nearly all grilled, put the sauce on full heat to thicken for the last 5 minutes or so. 
  6. When its at a perfect consistency, pour a thin layer on the bottom of an oven dish. Place a layer of  courgettes on top of the sauce, then a layer of sauce and then a layer of aubergine and so forth. 
  7. When you have done half of the vegetables, sprinkle some oregano on one of the layers and continue.
  8. Don't forget to season if needed. Then cut your halloumi block of cheese into slices around 1cm thick. 
  9. Pour one last layer of tomato sauce on the last vegetable layer and then place the cheese slices finally on the top. 
  10. Sprinkle some oregano on top and place the dish in the oven. Leave it for around 25 minutes, but keep checking it as every oven varies.
  11. For the last 5-10 minutes or so, put the oven on a grill setting so the cheese gains golden edges. 
  12. Let the vegetable bake cool down before serving it up.
