Serrano Ham (Spanish)

A simple, yet stylish starter perfect for a date!
- Start this recipe by boiling the asparagus in water. The white ends of the vegetable need to be cut off. There should be around 3 asparagus in one wrap, and I would suggest each starter portion would consist of two wraps.
- When the asparagus can be pierced with a knife (they should only take 5-6 minutes to cook), drain the water and add cold water or preferably ice on top. This should be done so that the asparagus remain nice and green.
- In mean time, cut one mozzarella (enough for two people) into slices. Also grate some parmesan and chop your plum tomatoes into four.
- Layout your sliced Serrano Ham (Parma ham can become very salty when cooked so this is a safer option) and put three stalks of asparagus on the far left side. Put a slice of mozzarella & a pinch of grated parmesan cheese. Then roll the asparagus all the way to the right so that they are totally wrapped by the ham.
- Place all your wrapped asparaguses on a tray suitable for the oven. Place one more slice of mozzarella, if you want only half a slice, on the top and in no order scatter the chopped tomatoes.
- Add a couple shots of white wine, a pinch of pepper and a very small pinch of salt. The Serrano ham is already salty so take caution not to season too much.
- Place the tray into a pre-heated oven at 180 ° C and leave for around 10 minutes. If you see the cheese onto hasn't melted but the ham is cooked, turn on the grill for a minute or so and the cheese will quickly golden.
- Serve along side a salad, mashed potatoes or simply on it's own.
