Chicken Salad


A Whole Breast of Chicken
Lettuce
Rocket Salad
Fresh Spinach
Cherry Tomatos
Red Onion
Carrot
Lemon
Salt
Olive Oil
A Sprinkle of Parsley



These are rough guidelines, if you prefer different types of salad, feel free to chose your own selection!


  1. Start by washing your various types of salad leaves. Place them all in a bowl and thinly slice half a red onion, peel and cut into small pieces a carrot, add several chopped cherry tomatoes, a drizzle of olive oil, a pinch of salt and to finish off squeeze half a fresh lemon. Mix all the ingredients well and leave the salad to absorb the seasoning.
  2. Season the whole chicken breast with salt, pepper and olive oil. Make sure you don't put to much oil or the meat will burn on the grill. 
  3. Place the chicken on a hot grill, turn the chicken when the side facing down is cooked so that both sides have a fair grilling. Make sure the chicken is fully cooked as raw chicken can be dangerous.
  4. Cut the meat into strips and leave to cool for a few minutes. 
  5. Place the salad on a plate and add the strips of chicken on top. 
  6. To finish, add a drizzle of oil on the chicken and some finely chopped parsley. You can also thinly cut some lemon slices for decoration.
